We all know I could care less if you are wearing gluten free pants or not, and you should know thats because I care much more about what we do to farmers and our mommy Earth than whether or not you are just secretly on the Atkins Diet. Pay Attention. This world is in no position for anyone not to.

At my restaurant PAKT in Kingston, NY, we have one rule. NO BULLSHIT. In our food + In our customers = On our planet. Lead by example. That’s it. You be the best you, I will be the best me, and I will promise you that I research the shit out of every ingredient that comes through the doors of my business, because that is what I CAN control, and spread to others. Its also why everything is so goddamn delicious.
We use and love products with palm oil, but it is very hard to know if you are using good or bad palm oil. I mean, where does it even come from? Believe it or not, the rainforest, which is a haven to more than HALF of the world’s estimated ten million species of plants, animals and insects. I mean you know how important the rainforest is, yeah? And not to worry, there is a better way to do it without losing the enormous benefits of palm oil. Win. Win.
To be honest, a lot of the time it is frustrating to care and not know what to do. Of course I don’t want the hipster-ization of quinoa to ruin lives, but what do you do? This is where being part of a campaign comes in handy. While you are at your job, they are at THEIR job, which is making sure its easy for you to get informed, and then get involved in your favorite way… Complaining to social media on your lunch break or before bed. Why spend time arguing politics when you can use the amazing platform that is the internets to actually spread real information?
