So another week of a ton of sweet corn and peppers in the CSA = another salad! This time I went Southwestern, as I defrosted my second Taco Pie. I was trapped by the sissy NY Government in my house for invisible hurricane evacuation mumbo jumbo, and I needed something to go with it. Plus, this corn is really freakin delicious. This salad is super quick and makes a great side, hot or cold.
Serves – 8 as a side.
Nutrition – Protein and fresh veggies! Corn is a starch though, so don’t eat the whole pot.
Ingredients –
1 can black beans
3-5 ears of corn*
1/4 cup shredded jack and cheddar cheeses (or cotija works well too, but all are optional)
1 bell pepper*
1 tomato*, diced
1/2 red onion*
1/4 cup cilantro, chopped
1/2 cup reduced fat sour cream
1 tsp garlic salt
1 pat butter
1/8 cup hot sauce of your choice, i used half Brooklyn The Hot and half Valentina
S & P to taste
There’s only one step! Melt butter in a sauce pan and add everything but the sour cream, hot sauce, cilantro stir until warm and then add in everything else and stir!
You should end up with a squishy delicious ugly pile of food! Success!!!!
