roasted roots and onion rings for adults!

So like I said, I only got a small portion of our share this week, and I am going to California for the next week, so I wont be cooking much. I did however manage to make myself one more awesome meal.

Crispy leek rings are one of my favorite things this year, they have taken the place of onion rings in my life! Roasted veggies are so easy and delicious, unfortunately they require your oven being on for awhile so i hate doing it in the summer time, so now that it is getting cold, it was a great time!

Serves – 3-4 as a side dish

Nutrition – Starch heavy but still nothing to be ashamed about.

Ingredients –

2 new potatoes*, diced
2 radishes*, diced
2 red potatoes*, diced
2 leeks*, sliced into rings
good quality extra virgin olive oil
freshly ground salt and pepper

Preheat oven to 375 while you prep, toss leeks in oil, S & P just enough to lightly coat and set aside in a bowl, then do the same with the potatoes and radishes. Spread them across an oiled pan and put in the oven for 15 minutes, then push aside to fit your leeks on the pan (or on another pan if you feel like doing another dish) and put back in the oven for 30 minutes.

Voila! Deliciousness!

I also had half a leftover grilled steak i never ate, so i put that baby to good use, I chopped it into bite size pieces and put it in a ramekin and added it to the oven when there was only 10 minutes left, then at the end put some provolone on top. Perfection!
