simple slaw salad

So while I was at my book club meeting drinking my garam masala tea with bourbon, I asked the Green Bee to make a nice raw salad for a light dinner, because I knew I’d be eating unhealthy snacks. This simple slaw salad is a favorite of mine, and is easy to make.

Serves 2 – Me as dinner, the Bee as a side salad.

Ingredients –

SALAD
2 cups shredded cabbage*
1 radish*, sliced thin
3/4 cup shredded carrots
1/8 cup almonds
2 spoonfuls of sesame seeds

DRESSING (This I had already made, I make a full bottle and keep it in the house, so if you want less, cut this down.)
1/4 cup good quality olive oil
1/4 cup sugar
1/4 cup red wine vinegar
2 TB soy sauce

So I have a tiny carafe with a motor that came with my Aerogarden that I use to blend dressings, but you can just shake it in a bottle. Its a really great dressing, and you only need a little bit and it adds a ton of flavor.

Sometimes I toast the almonds and sesame seeds in a little butter and sugar as well, but like I said, I was aimed at being healthy, so that part was omitted this time. So basically all you have to do is toss everything together, and then congratulate yourself on getting your servings of raw veggies in for the day! : )
