So, I have been trying to eat more meals that are 75-100% vegetables. This is a great way to do this that is also filling and tasty. It is also a much lighter version of a salad with ranch dressing, which all of us Southerners love. Plus I have had a crazy craving for raw broccoli all week.
Makes – 3 massive salads with 2 servings of ranch salad leftover to be used as a chunky dip
Nutrition – YUP! Pretty good.
Ingredients (Whatever you want, really) This is all CSA stuff for the most part.
Salad Base
i head butter lettuce, washed and torn
1 head red romaine, washed and torn
1 bunch arugula (which i left out of mine and put only in my guests cause that’s gross)
1 handful mixed greens
8 pieces salami cut in to bits
1 handful crushed walnuts
1 handful sunflower seeds
Ranch salad
1 bunch carrots, peeled and cut in to coins
2 yellow cucumbers, cut in to coins
1 green cucumber, cut in to coins
2 heads raw broccoli, chopped
1 1/2 cups low fat sour cream
1 1/2 packages ranch seasoning, or your own herb/spice combo
Basically, you mix your greens in a bowl and toss with salami, seeds and nuts
In a separate bowl, mix your chopped veggies with the sour cream and ranch. SO easy it is ridiculous.
Now squeeze a lemon over your greens and plop a scoop of the ranch salad over your salad base and devour. Congratulate yourself on getting so many raw vegetables in to your system without feeling like you might keel over and die of hunger and annoyance. : )
I’ll be going with my own herb/spice combo as ranch just isn’t my thing but – huge salads? I’m in.
