CSA #19 and slow cooker spicy chicken and squash

You can tell from the colors in this week’s CSA that “Winter is Coming.”

Vegetable share:

1 bu Broccoli Raab (mostly leaves, some small florets)
1 head lettuce
1 head tatsoi
1 bu Kale
.25 lb Green beans
1 Butternut squash
.10 lb (loose) cilantro
.25 lb Mesclun lettuce
1 bu Sweet salad turnips

Fruit share: apples and pears!

Egg share: ยฝ dozen pastured eggs

Flower share: zinnias, celosia, cosmos, etc.

And what did I get!?! The coolest flowers ever. One lonely bouquet that no one wanted. No one but ME. A nice lady told me they are known as Green Lanterns. Which is way more appropriate than what I was calling them…Unshaven Ball Flowers. Which is made even funnier by the fact that they are in the milkweed family, so when I trim their ends, thick white liquid comes out.

As I am crazed this week, but I need to get some comfort food in me before I head out to Asia for a couple weeks, I soaked 4 chicken breasts in super spicy salsa/hot sauce (everything works well here) and tossed them in the slow cooker this morning before I left for work, I threw a cut up butternut squash on top, added 2 cups of water and 2 TB of bacon fat, and set it on low for 8 hours. And then I totally forgot about it.

I was coming up my elevator after running around and working all day and started smelling something awesome. I wondered what my neighbors were making and if they might invite me over for dinner. Then I walked in to my apartment and realized it wasn’t the neighbors. IT WAS MYYY HOUSE! SCORE! (Also, I should sleep more.)

As I am not grocery shopping in prep for my trip, I didn’t have cotija cheese, which I would have preferred. But queso fresco totally works. Add to that some CSA cilantro that I haphazardly ripped apart with my hungry fingers and the jalapeรฑos I pickled last week, and put on a yummy spinach wrap! Then I used a fork to shred the chicken in the cooker, grabbed a slotted spoon and poured some chicken and squash goodness on top.

And, that’s a wrap.

Its also lunch for tomorrow! (And to share with my lovely co-designers, who are bringing a veggie side! perfection!)

  1. Tammy~ It is soft for sure, but i like it that way. I want it to fall apart when my fork touches it. I loathe dry, hard chicken. I have def had days where I had to work late and so it ended up going for 10 hours and was pretty mushy, but actually still edible. I dont mind squishy chicken though! haha.

    CSA haul looks amazing too. Greens are the best part about this time of year!

  3. bahahahaha! those flowers are phallic and creepy. haha. love it!

    also, all i could think when i saw your greens and apples is braising greens with sauteed apples – yum!
