deviled potato salad

My parents were kind enough to grill burgers and veggies for my friends and I while I was visiting them, so i did my part and made some sides. I made a slight variation on the pasta salad previously posted, and also a variation on my good friend Jamie’s deviled potato salad recipe. Definitely ugly, definitely delicious.

Serves 6

Nutrition – Nope. All starch and fat, with some egg protein. But whole foods. And its just a side, not a meal.

Ingredients –
6 red skin potatoes, boiled with skin on and then diced
4 hard boiled eggs
1/4 onion, grated
1/2 cup mayonnaise
3 tablespoons yellow mustard
1 teaspoon paprika
1 teaspoon Frank’s Red Hot
3 scallions, thinly sliced
S&P to taste

Step 1 – Boil potatoes and eggs in water seasoned with coarse salt until they are tender. Remove eggs as ready and let cool. Drain cooked potatoes and return to the warm pot to dry them out. Let cool in a colander until ready to cut.

Step 2 – In the bottom of a medium mixing bowl, grate 1/4 onion using a hand grater. Add mustard and mayonnaise, paprika and cayenne pepper sauce to the grated onion and stir to combine.

Step 3 – Find a friend to peel your eggs for you while you are cutting potatoes. In my case I chose my bff Charlie, who doesnt cook, and his mother. I hav to include this picture for 2 reasons. One, i love egg porn. I can look at pictures of eggs all day, i am a crazy person. and Two, it cracks me up. Guess which egg he peeled before getting fired. (After they’re peeled, cut them up too.)

Step 4 – Add potatoes and eggs to the bowl and stir to evenly distribute dressing, making sure to smash your egg bits around.

Step 5 – Season potato salad with salt and pepper and taste to adjust your seasonings.

Step 6 – Top servings of salad with chopped scallions. (which of course i didn’t take a picture of)
