So i get sick of eating the same thing, but i love to make giant batches of things so i don’t have to really cook for a few days and so i have easily manipulated leftovers. This is what became of my cauliflower bolstered pasta and tomato sauce.
Serves – 2 hearty bowls with 2 more to freeze.

1 lb fresh ground turkey
2 small peppers*, one hot, one sweet
1 bell pepper*
1/2 a red onion*
1 tomato*, diced
4 cloves of garlic, minced
1/4 cup jalepeno slices
3 TB Brooklyn The Hot Sauce
3 TB Valentina hot sauce
1/2 cup sour cream
1/4 cup cilantro, torn into bits
S & P to taste
So i had to start with a picture of my gorgeous CSA haul although half of this is destined for something else. But I also wanted you to see the hot salsa I cannot live without, but cannot handle on its own.
Step 1 – chop onions, peppers and garlic and sautee in a little olive oil in a sauce pan.
Step 2 – When your veggies are starting to get soft, add your ground turkey and chop and stir with a metal spatula so that it cooks evenly but doesn’t get chewy…
Step 3 – When turkey is mostly done, add your diced tomatoes, cilantro, salt and pepper and stir for a minute until everything has a chance to mingle.
Step 4 – add tomato sauce, hot sauces, and jalepenos and stir to heated. Then add sour cream and stir s’more.
Step 5 – Stir in cooked cauliflower and pasta
Step 6 – top with shredded cheeses of your choice and garnish with jalepenos and cilantro. In my case, add another heavy pour of Brooklyn The Hot sauce!!! Get a glass of milk and go breathe fire!
