So lamb is one of my favorite things, and I also really enjoy Indian flavors because they are so complex, this was super easy and really comforting and delicious!
Serves – 4
Nutrition – Pretty well rounded, esp if you eat it with a nice raw side salad.
Ingredients –
1 pound lamb chunks
1 tomato*, diced
1 red pepper*, diced
1/2 onion*, sliced into long pieces
3/4 cup yogurt
2 tb curry paste
2 teaspoon coriander
3 cloves minced garlic
1 teaspoon chili powder
pinch paprika
1 tb red wine vinegar
1 pkg yellow rice
1 tb olive oil
4-5 saffron strands
Step 1 – Mix spices with yogurt and vinegar and pour over lamb in a ziploc bag and let marinate overnight.
Step 2 – The next day, put your rice on to cook and add saffron and heat your oil in a saucepan and add onions and peppers and sautee until cooked
Step 3 – add lamb and stir until it is pink in the middle but cooked on the outside, and then add your tomatoes and stir to just warm. Serve over rice and have with a raw cucumber salad! Nom nom.
