Sometimes you just need a big bowl of breakfast.
This picture is much uglier, and shows the components better…but I couldn’t decide between the two. So you get both.
Anyways. Besides the ham and cheese, this meal was made up of all CSA ingredients! YAY!
You decide what amount to make here, and what to throw in….but here is what I did to feed 2 people. There aren’t really a lot of pictures, and I apologize. But now you know why I never post my breakfasts and brunches. I am not a morning person.
2 new potatoes*, sliced into 1/4″ thin coins
1 red pepper*, diced
1 green sweet pepper*, diced
1 garlic clove*, diced
1/4 onion*, diced
4 eggs*
4 ripped up slices of deli ham
1/4 cup shredded gruyere/swiss mix
2 TB hot sauce of choice
1 TB butter
S&P to taste
Heat butter and garlic in a skillet over medium heat and then add potatoes and some water, I like to think of this technique as steam frying. It makes me feel like I didn’t just put 2 pats of butter into a pan. It also makes sure nothing sticks. Steam-fry taters for about 15 minutes and then add peppers and onions and cook for another 15, or until potatoes are al dente. I add water and stir a ton during this time
Now that everything is pretty much cooked, you can toss in your ham bits, I pretty much toss in whatever meaty leftovers I have at this point and then add salt, pepper and hot sauce. Give it a good stir, and then its egg time. I personally use a salad dressing mixer and shake my eggs to mix with 3/4 of the shreddy cheese and pour on top of everything, but sometimes if i want some whites i crack them straight in to the pan. The eggs coat everything and cook very quickly, then you’re good to scoop some scramble in to a bowl, drizzle on more hot sauce and the rest of your cheese and have at it on the couch while you watch cartoons and congratulate yourself on deciding not to go to work today.
