So last week, my gem of a coworker brought in this awesome and easy soup for us to share at lunch. She substituted sweet potatoes for reg potatoes, took out the beans, and added kabocha squash. It was warm magic. I have been using up the last of my CSA storage goods and decided to return the favor this week by making a version of my own. I also feel a sickness coming on and I want to kill it.
I followed the same basic recipe, only i cooked some lean ground turkey with a handful of pancetta instead of sausage, kept the beans, used butternut squash instead of potatoes, and added carrots, collard greens and shiitake mushrooms. Basically, this recipe is simple as shit, yet incredible and wonderful and you should make it right now with whatever you have!!! So what’ll it be!?
Oooh! Kabocha! Yummy. Looks like a great soup for the season (even if we are having really unseasonable weather right now).
