Yes, I am setting things on fire again. I can’t stop. I torched and then roasted 10 red peppers for this gorgeous soup, which is super healthy, and will help cure what ails you.
10 red peppers, roasted until blistered and soft then deseeded and stems removed.
4-6 cups chicken broth
1 head savoy cabbage
3 TB minced black olives
1 TB thyme
1 TB oregano
1 handful purple basil, roughly chopped
freshly ground salt and pepper
freshly grated parmesan
1/4 salami, diced
Seriously it couldn’t be easier. If you want to do the topping (And I recommend it) cook the salami (or pancetta or bacon) in the bottom of your stock pot and then add the onions and cook until soft, then set aside. Heat the broth in the same pot until boiling. Add diced potatoes and cover. Cook for 20 minutes or until soft. Add roasted peppers. Get out your immersion blender and blend that shit. Chop and chuck in a head of cabbage. Cook for 10-15 minutes. Blend again. Add herbs and grind some S&P in there, and then pour into a bowl. Grate some cheese on top and put a pinch of toppings. Eat your heart out. Without poisoning it.
