Taco Pie!

This is one of my comforts, and shows my suburban Southern roots with its pre-packaged foods. Until recently discovering Brooklyn Salsa Company, i also used the Taco kit seasoning packet. Shamelessly.

Makes – 2 pies ( i freeze one)

Serves- 6 per pie

Nutrition – Not great, but you ARE using turkey in lieu of fatty beef and its wonderful for the mind.

Ingredients –

2 pack pre packaged Pillsbury pie crust, or get fancy and make your own.
1 lb fresh ground turkey
2 TB Brooklyn Salsa Company THE HOT (and they mean it) or taco seasoning of your choice
1 jalapeno
1 garlic clove
1 block cotija cheese, crumbled
1 can refried beans (i sometimes substitute black beans)
1 container sour cream. I like Breakstone’s reduced fat
2 cups shredded cheese – I like a combo of cheddar and pepper jack

sliced black olives and scallions to top

Serve with – guacamole and corn cooked with cilantro, corn chips.

Step 1 – brown meat with garlic, jalapenos, and salsa.
Step 2 – Sprinkle a tiny bit of shredded cheese onto crust and Preheat oven to 350 degrees
Step 3 – Layer on meat, a handful of cotija cheese, refried beans, meat, top with shredded cheese,

pop in the oven for 30 minutes or until cheese is burnt and yummy. Top with sour cream, scallions, and sliced black olives. Ugly and delicious!
